TC’s Ponderosa in Dickens, Texas

I love doing food shoots and have been lucky to work with many real Lubbock institutions. 

TC’s Ponderosa in Dickens has existed for just about half a century. Though it’s not in Lubbock, many Lubbock residents make up a considerable chunk of its business. Many stop by on their way to other destinations, while others drive to Dickens for their excellent barbeque. Most of that time, the Ponderosa was primarily a grocery store selling liquor and beer. Jackie and Virginia Nunn initially created and ran the business. They sold out to John Styles, who sold the company to the current owners in about 2001.Tom Hale, also known as Tom Cat and thus the TC in TC’s Ponderosa, worked for South Plains Electric Cooperative before his retirement, but cooking briskets was his passion. His family purchased the Ponderosa, thus beginning a project that lives on today. Sadly, Tom passed away in 2018, and today, his wife, Nancy Hale, and daughter, Valerie Smithey, operate the business. However, their whole family comes together for catering jobs, and today, their restaurant smokes some 20 briskets every day. Like other homegrown restaurants, TC Ponderosa takes pride in its operation and is on a mission to create a special place with very special food to honor Tom Cat’s legacy. This family spirit makes TC Ponderosa a must-visit for Lubbock foodies and everyone passing through this small, historic town.
